Ruth Dallas Mathys

When I think of Ruth, I see her in a light green striped apron in the kitchen at Caux. From the 1960s to the mid-1970s I was one of the leaders of the "big kitchen" at the Caux meetings. Ruth could often be found in the "small kitchen" where special menus were prepared.

She was able to put to good use the knowledge she had acquired during her internship at Le Cordon Bleu in Paris. At that time she lived at the Moral Rearmament Center in Boulogne s/ Seine where she cooked for the "Grande Famille". After class she would share with me her newly acquired (or still hot!) knowledge on how to prepare a béarnaise sauce or how to slice a leg of lamb.

At her wedding on December 29, 1973 in Caux I was in the kitchen when she came with her husband George and his family to taste what I was preparing.

Much later, while she was living in Ireland and I in Eastern Switzerland with my husband Fredy, she would sometimes visit me during her stays in Switzerland, along with our mutual friend Berti Zeller. We would sit under our arbor and enjoy asparagus from Hüttwiler or a speciality in the garden of the Carthusian monastery restaurant in Ittingen.

At Christmas and on my birthday, I received tastefully selected cards and greetings in his inimitable handwriting. And as it became more and more difficult for her to write, she would spontaneously surprise me by calling me in the afternoon on the phone. She has been a true and faithful friend to me throughout the years.
