Leone Exton Beale

Leone Exton was Director of Catering at the Westminster Theatre, London. With a team of colleagues, she created the restaurant, kitchens and snack bar at the Arts Centre. Her father, Lionel Exton, who built up the chain of Exton Hotels in the South of England between the wars, was one of the men who took a lead in purchasing the Westminster Theatre and setting up the Westminster Memorial Trust in 1946.
